A big part of French Paris mushrooms production is made in Saumur.These mushrooms grow in ancient tuffeau quarries - tuffeau is the kind of stone which was used to build the Châteaux in the Loire valley. - These tuffeau quarries are numerous in the region and they have exactly the ideal temperature and humidity rate necessary to mushrooms.
